For one night only, guests will experience a special menu inspired by the groundbreaking cuisine that defined Aureole for over three decades. From the signature Scallop “Sandwich” to bold, seasonal expressions of Progressive American cuisine, this collaboration is a celebration of culinary innovation, mentorship, and legacy.
About Aureole
Aureole was the flagship restaurant for Chef Palmer’s bold and refined approach to American fine dining—pairing classical technique with vibrant, modern flavor. Originally opened on East 61st Street, Aureole helped shape a new era of New York dining, eventually moving to One Bryant Park and earning multiple Michelin stars over its 30-year tenure. Beyond the accolades, it served as a launchpad for countless chefs and hospitality professionals.
For Chef Mar, the evening holds deep personal meaning—Aureole was where she experienced fine dining for the very first time as a young culinary student. That moment changed everything.
